About the Recipe

Immerse yourself in the creamy indulgence of Raktashali Payasam, a traditional South Indian dessert bursting with flavor. This rich pudding combines the nutty notes of Rakthashali rice with the comforting warmth of milk, jaggery, and ghee, creating a decadent treat perfect for special occasions or everyday enjoyment.


  • 1 cup Rakthashali rice (red rice)

  • 3 cups water

  • 1 cup jaggery (grated)

  • 1 cup thick coconut milk

  • 1/4 cup raisins

  • 1/4 cup cashews

  • 1/4 cup ghee

  • 1/4 teaspoon cardamom powder

  • Pinch of salt


Preparation (30 minutes):

  • Wash and soak Rakthashali rice for 30 minutes.

Step 1: Toasting the Nuts (5 minutes):

  • In a pan, heat ghee.

  • Fry cashews and raisins until golden, set aside.

Step 2: Cooking the Rice (10 minutes):

  • Drain rice and add it to milk.

  • Cook on medium heat until soft and mushy.

Step 3: Dissolving the Jaggery (10 minutes):

  • Add jaggery and cook until it dissolves, stirring continuously.

Step 4: Simmering & Thickening (10-15 minutes):

  • Reduce heat and simmer for 10-15 minutes, or until desired consistency.

Step 5: Finishing Touches (5 minutes):

  • Stir in cardamom powder and saffron (if using).

  • Garnish with fried cashews and raisins.

  • Serve warm or chilled.
