About the Recipe

Ingredients

  • 1 cup Rakthashali rice (30 min soak)

  • 3 cups water

  • 1 teaspoon turmeric powder

  • 1 teaspoon cumin powder

  • 1 teaspoon coriander powder

  • 1/2 teaspoon garam masala

  • 1/2 teaspoon salt

  • 1/4 cup ghee

  • 1/4 cup chopped onions

  • 1/4 cup chopped tomatoes

  • 1/4 cup chopped cilantro

Preparation

Preparation (10 minutes):

  1. 10 min: Wash and soak Rakthashali rice in water for 30 minutes.


Cooking the Kanji (15 minutes):

  1. 2 min: In a pressure cooker, combine soaked rice, water, turmeric powder, cumin powder, coriander powder, garam masala, and salt.

  2. 10 min: Close the pressure cooker and cook on high heat for 3 whistles.

  3. 3 min: Let the pressure release naturally before opening the cooker.


Adding Flavor & Textures (5 minutes):

  1. 2 min: In a pan, heat ghee over medium heat. Add onions and saute until softened.

  2. 2 min: Add tomatoes and cook until mushy.

  3. 1 min: Stir in chopped cilantro.


Combining & Finishing Touches (2 minutes):

  1. 2 min: Mash the cooked rice in the pressure cooker with a spoon.

  2. 2 min: Add the mashed rice to the pan with the prepared vegetables, mixing well.

  3. 1 min: Simmer for a minute or two, allowing flavors to blend.


Total Time: Approximately 30 minutes
