Start your day right with the protein-packed goodness of Rakthashali Upma! This savory dish combines semolina with Rakthashali rice, vegetables, and spices for a flavorful and healthy breakfast that's quick and easy to prepare.
Ingredients
1/2 cup Rakthashali rice (soaked for 30 minutes) - reddish-pink rice grains
1/2 cup semolina
1 cup water
1 cup milk
1 onion (chopped)
1 green chili (chopped)
1/2 teaspoon mustard seeds
1/4 teaspoon turmeric powder
1/4 teaspoon cumin seeds
Salt to taste
Ghee or oil for cooking
Cashews (optional, roasted)
Curry leaves (optional) for garnish
Preparation
Stage 1: Preparation (15 minutes):
15 min: Wash and soak Rakthashali rice for 15 minutes.
Stage 2: Tempering (3 minutes):
2 min: Heat ghee in a pan. Add mustard seeds and cumin seeds, splutter them.
1 min: Add curry leaf (if using) and green chili, saute for a few seconds.
Stage 3: Sauteing Vegetables (2 minutes):
2 min: Add chopped vegetables and saute until slightly tender
Stage 4: Spices & Rice (2 minutes):
1 min: Add turmeric powder and salt, mix well.
1 min: Add semolina and soaked rice, mix well and saute for a minute.
Stage 5: Cooking the Upma (5 minutes):
2 min: Add enough water to cook the rice and semolina (approximately 2 cups).
3 min: Cover the pan and cook on medium heat until rice and semolina are cooked through.
Stage 6: Serving (0 minutes):
0 min: Serve hot with chutney or sambar.
