Embrace the comforting warmth of Rakthashali Khichdi, a one-pot meal packed with protein, fiber, and flavor. This simple dish combines Rakthashali rice, lentils, vegetables, and spices for a satisfying and nutritious meal that's perfect for lunch or dinner.
Ingredients
1 cup Rakthashali rice (rinsed and soaked)
1 cup mixed vegetables (chopped carrots, peas, beans, potatoes)
1/2 cup moong dal (washed and soaked)
1 onion (chopped)
1 tomato (chopped)
1 green chili (chopped)
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1/4 teaspoon red chili powder
Salt to taste
Ghee or oil for cooking
Preparation
Stage 1: Sautéing & Flavor Building:
Heat ghee or oil in a pressure cooker over medium heat.
Add cumin seeds and let them splutter for a few seconds.
Add chopped onion and saute until translucent.
Stage 2: Adding Spices & Vegetables:
Add green chili and chopped tomato. Cook for a couple of minutes until the tomato softens.
Add turmeric powder, red chili powder, and salt. Stir well to combine.
Stage 3: Bringing It Together:
Add rinsed moong dal and soaked Rakthashali rice.
Add mixed vegetables and enough water to cover the ingredients by an inch.
Close the pressure cooker lid and cook for 3-4 whistles or until the rice and dal are cooked through.
Stage 4: Finishing Touches & Enjoying:
Let the pressure release naturally before opening the cooker.
Fluff the cooked khichdi with a fork.
Serve hot with a dollop of ghee or coconut chutney.Step 1
