Embrace the comforting warmth of Rakthashali Khichdi, a one-pot meal packed with protein, fiber, and flavor. This simple dish combines Rakthashali rice, lentils, vegetables, and spices for a satisfying and nutritious meal that's perfect for lunch or dinner.

Ingredients

  • 1 cup Rakthashali rice (rinsed and soaked)

  • 1 cup mixed vegetables (chopped carrots, peas, beans, potatoes)

  • 1/2 cup moong dal (washed and soaked)

  • 1 onion (chopped)

  • 1 tomato (chopped)

  • 1 green chili (chopped)

  • 1 teaspoon cumin seeds

  • 1/2 teaspoon turmeric powder

  • 1/4 teaspoon red chili powder

  • Salt to taste

  • Ghee or oil for cooking

Preparation

Stage 1: Sautéing & Flavor Building:


  1. Heat ghee or oil in a pressure cooker over medium heat.

  2. Add cumin seeds and let them splutter for a few seconds.

  3. Add chopped onion and saute until translucent.


Stage 2: Adding Spices & Vegetables:


  1. Add green chili and chopped tomato. Cook for a couple of minutes until the tomato softens.

  2. Add turmeric powder, red chili powder, and salt. Stir well to combine.


Stage 3: Bringing It Together:


  1. Add rinsed moong dal and soaked Rakthashali rice.

  2. Add mixed vegetables and enough water to cover the ingredients by an inch.

  3. Close the pressure cooker lid and cook for 3-4 whistles or until the rice and dal are cooked through.


Stage 4: Finishing Touches & Enjoying:

  1. Let the pressure release naturally before opening the cooker.

  2. Fluff the cooked khichdi with a fork.

  3. Serve hot with a dollop of ghee or coconut chutney.Step 1
